Watermelon Popsicles that are sweet and fresh tasting with a surprise rind flavor made of kiwi. Made with all fresh fruit and no food dyes. Low in sugar with keto adaption advice.

I wanted to try them all… but you know the summer heat prevented me from walking around with 10 popsicles all at once 😛

It was finally my turn! I was stunned. Which one, which one!

I can’t make a mistake and pick a crappy one then I’ll be angry that I waited 15 minutes in line.

I noticed a lot of people picked the pretty watermelon popsicle one.

I went with the popular choice and bit into it.

Oh my! It was delicious. Sweet and fresh and I could still taste the watermelon. Then I got to the “green rind” part and I thought they probably dyed the same mixture green… no no no!

It was kiwi!

I could make a whole popsicle based on this kiwi mixture (hmm maybe I will!). Here’s my slightly less sweet version.

High-powered blender or food processor

Measuring spoons and cups

1 large knife

Cutting board

Airtight storage container for leftovers

Watermelon Popsicle Ingredients

Watermelon Part (pink part)

2 1/2 cups watermelon, rind removed and cubed

2/3 cup coconut water

1/4 cup lemon juice

Watermelon 11g

1 1/2 teaspoons raw honey

Pinch of fine sea salt

Rind Part (green part)

2 1/2 kiwis, peeled and chopped

1/3 cup coconut water

2 1/2 teaspoons lemon juice

1 1/2 teaspoons raw honey

Watermelon Gelato

Pinch of fine sea salt

How to Make Watermelon Popsicles

  1. Place all the ingredients for the watermelon part into a blender or food processor and process until smooth.
  2. Pour this mixture into your popsicle molds, (I used this one) and leave about 1/2-inch space for the rind.
  3. Place in your freezer for at least 30 minutes.
  4. Place the ingredients for the rind in a blender or food processor and puree until smooth and pour over top of the watermelon ingredients in the mold. Add your popsicle sticks and allow it to freeze completely, about 3 hours.
  5. Serve once frozen! To remove popsicles from mold, run the mold under slightly warm water for a couple of minutes. Remove from water and pull popsicles out.

How can I make these popsicles keto-friendly?

You can easily make these popsicles keto-friendly by using erythritol instead of raw honey. Although because of the watermelon and kiwi they might be more a low carb treat instead of a keto treat.

How do I store these homemade popsicles?

Keep the popsicles stored in their mold. You can remove the popsicles form the mold and store them in anairtight container in your freezer for up to 3 months.
